How is chocolate supposed to be stored?

4 conditions must be observed when storing chocolate.

It must be stored in appropriate temperature. Ideal temperature is
18-22°C

It must be stored in low-moisture and dry environments.

It must be stored in inodorous environment.

It should not be kept in refrigerator

The most important compound within chocolate is cocoa. Cocoa oil has a sensitive structure. In case of subjecting to high temperature or moisture, crystal structure of cocoa oil is damaged and crystals go up to surface. Re-cooling of crystals in surface causes bleaching on chocolate. This bleaching does not affect taste, but it affects appearance. Moreover, chocolate has a structure that absorbs odor very quickly. Therefore, it should be stored in inodorous, air-tight environments.
